Ingredients

2 Tbsp. flour
1 1/2 tsp. salt
1/4 tsp. baking powder
1/8 tsp. pepper
6 medium potatoes, grated
2 eggs, well beaten
1 Tbsp. grated onion
Preparation

Combine dry ingredients.
Add eggs, onion and grated potatoes; beat with a spoon.
Pour oil into skillet about 1/4-inch deep and heat.
Dip 2 tablespoons batter into hot oil, cooking until golden brown.
Turn to brown other side.
