Molasses Oat Muffins - cooking recipe

Ingredients
    1 1/2 c. quick cooked oats, toasted
    1 c. all-purpose flour
    3 tsp. baking powder
    3/4 tsp. salt
    3/4 tsp. cinnamon
    1/3 c. dark brown sugar, firmly packed
    1 large egg
    2/3 c. milk
    1/3 c. molasses
    1/3 c. oil
Preparation
    To toast oats, spread onto ungreased cake pan. Bake at 350\u00b0 for 14 to 18 minutes; cool. In medium bowl, stir together flour, baking powder, salt and cinnamon. Stir in sugar and toasted oats. In small bowl, beat egg. Add milk and molasses to egg; beat well. Add to flour mixture. Add oil. Stir until dry ingredients are moistened. Fill muffin tins sprayed with cooking spray 2/3 full. Bake in preheated 400\u00b0 oven 15 to 18 minutes.
