Spicy Black-Eyed Peas - cooking recipe

Ingredients
    1 lb. frozen or canned black-eyed peas
    2 medium onions, finely chopped
    2 medium tomatoes, finely chopped
    1/2-inch square piece ginger root, minced
    2 hot green chilies, cut in 1-inch long pieces
    1 Tbsp. vegetable oil
    1 tsp. red chili pepper
    2 tsp. ground coriander powder
    1/2 tsp. salt
    1/4 tsp. ground turmeric powder
Preparation
    Heat oil.
    When hot, add chopped onions, ginger and chilies. Saute the mixture on medium heat until the onions become tender. Add chopped tomatoes and all the spices.
    Saute a few more minutes.
    Add black-eyed peas; cook the mixture on medium heat for about 30 minutes, stirring occasionally.
    Add 1 to 2 tablespoons of water to prevent sticking.
    Take away from heat and garnish with chopped cilantro.
