Chicken And Sausage Jambalaya - cooking recipe
Ingredients

4 c. chopped, cooked chicken
1 (16 oz.) Cajun-style smoked sausage, cut into 1/4-inch slices
2 celery ribs, chopped
1 medium green bell pepper, chopped
1 1/4 c. uncooked long grain rice
1 medium onion, chopped
5 c. chicken broth
1 Tbsp. Cajun seasoning
2 Tbsp. oil
Preparation

Cook sausage in oil in Dutch oven over medium heat until brown. Add celery, onion and pepper. Saut until tender. Stir in chicken, broth, rice and Cajun seasoning. Bring to a boil. Cover and reduce heat to simmer. Simmer for 45 minutes. Liquid should be absorbed. Remove from heat. Let stand 10 to 15 minutes before serving.
