1 loaf French bread
1/2 c. small curd cottage cheese
1/4 c. parsley, chopped
2 Tbsp. grated Parmesan cheese
2 Tbsp. onion, grated
1 garlic clove, chopped
1/4 tsp. ground pepper
Preparation

Preheat oven to 400\u00b0.
With sharp knife, make 13 evenly spaced deep vertical slits in loaf of bread, being careful not to slice all the way through.
Set aside.
In blender, process cottage cheese until smooth.
Add parsley, Parmesan cheese, onion, garlic and pepper.
Process until parsley and garlic are minced.
Press bread open between slices.
With small spatula, spread cheese mixture on surface.
Bake 8 minutes, or until hot and crispy. Serve hot.
