Zucchini Bread - cooking recipe
Ingredients

2 2/3 c. sugar
2/3 c. shortening
3 c. shredded zucchini
2/3 c. water
4 eggs
3 1/3 c. all-purpose flour
2 Tbsp. salt
1 tsp. ground cinnamon
1 tsp. ground cloves
2 tsp. vanilla
1/2 tsp. baking powder
2 tsp. baking soda
2/3 c. chopped nuts (optional)
2/3 c. raisins (optional)
Preparation

Heat oven to 350\u00b0.
Grease bottom only of 2 loaf pans, 9 x 5 x 3-inches.
Mix sugar and shortening in 2 1/2-quart bowl.
Stir in zucchini, water and eggs.
Mix in flour, baking soda, salt, cinnamon, cloves, vanilla and baking powder.
Stir in nuts or raisins.
Pour into pans.
Bake until wooden pick inserted in center comes out clean, 60 to 70 minutes.
Cool 5 minutes.
Loosen sides of loaves before slicing.
