Ratatouille - cooking recipe

Ingredients
    2 medium zucchini
    2 crookneck squash
    1 medium eggplant
    1/2 c. olive oil
    3 cloves garlic, slivered
    3 large onions, thinly sliced
    4 green peppers, quartered
    2 tsp. chopped parsley
    1 tsp. basil
Preparation
    In olive oil, starting with the garlic, saute until pale, then add onions and peppers.
    Add rest of ingredients.
    Simmer, covered, 45 minutes.
    Uncover, then simmer 15 more minutes to reduce water.
    Serve hot or cold with sour cream.
