Navy Bean Soup - cooking recipe

Ingredients
    2 lb. navy beans
    1 1/2 lb. smoked ham hock
    1 onion, sliced
    1 Tbsp. butter or margarine
    salt and pepper to taste
Preparation
    Wash beans in hot water; drain.
    Combine in large kettle with ham hock and 4 quarts hot water.
    Cover.
    Cook slowly for 3 to 4 hours or until beans are tender, but not mushy.
