Zucchini Bread - cooking recipe

Ingredients
    3 c. sifted flour
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. baking powder
    1 Tbsp. cinnamon
    3 eggs
    1 3/4 c. sugar
    1 c. vegetable oil
    2 medium size zucchini, shredded (2 c.)
    2 tsp. vanilla
    1 Tbsp. grated lemon rind
Preparation
    Sift flour, salt, baking soda, baking powder and cinnamon onto waxed paper.
    Beat eggs lightly in large bowl, stir in oil, sugar, zucchini, lemon rind and vanilla.
    Add flour mixture, blending thoroughly.
    Spoon batter into 2 well-greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans.
    Bake in oven at 350\u00b0 for 50 minutes or until center springs back when lightly touched.
    Cool for 10 minutes in pan or wire rack.
    Remove from pans and cool thoroughly.
