Ingredients

2 c. peeled and chopped potatoes
4 eggs
2 Tbsp. melted butter
3/4 c. flour
1 tsp. salt
1/2 c. milk
Preparation

Pat potatoes dry between
paper
towels.
Put
eggs
in blender and blend for a
few
seconds, then add butter, flour, salt and milk.
Add potatoes
and
puree
smooth.
Pour onto a greased hot skillet or griddle and cook for about 2 minutes on each side.
