Fig Preserves - cooking recipe

Ingredients
    figs
    sugar
    water
    sliced lemon
Preparation
    First wash figs, discarding broken ones.
    In a large pot, place equal weights of figs and sugar; add a little water. Simmer, lightly covered, until figs are opaque.
    Turn off heat, add 1 sliced lemon and let sit in pot for about 4 hours to make figs plump.
    Reheat and pour into sterilized jars.
    Cool on rack. Jar tops will make popping sound as they seal.
