Mexican Rice(Arroz Rojo) - cooking recipe

Ingredients
    2 to 3 tsp. oil
    1 c. rice
    2 1/2 c. water/chicken broth
    1/2 c. tomato sauce
    1/2 medium onion, chopped
    1 clove of garlic, minced
Preparation
    Saute rice, onions and garlic until rice changes color (turns whiter and begins to toast).
    Add tomato sauce; stir until rice is coated.
    Add 2 cups water/broth.
    Let simmer until water is almost evaporated, then add last 1/2 cup of water/broth.
    Simmer until evaporated.
