Poached Orange Roughy - cooking recipe
Ingredients

1 lb. orange roughy fillets
1/4 c. chopped celery
1/2 c. sliced onions
2 tsp. olive oil
1 (16 oz.) can whole tomatoes, coarsely chopped
1/8 tsp. pepper
1 lemon, sliced
1 bay leaf
1/4 c. water
1/2 tsp. sugar
1 Tbsp. cider vinegar
1 Tbsp. white wine
Preparation

Rinse fish and pat dry.
Cook celery and onion in oil until tender.
Sprinkle with pepper.
Cover fish with tomato and lemon slices.
Combine water, sugar, vinegar, wine and bay leaf.
Pour over fish mixture.
Cover and simmer 8 to 10 minutes.
Serves 4.
