Eggplant Dressing - cooking recipe

Ingredients
    1 lb. ground beef
    1 small onion
    1/2 c. green peppers
    1/2 c. chopped celery
    1 medium eggplant
    2 to 3 tsp. Creole seasoning
    1/2 tsp. garlic and hot sauce
    3 c. cooked rice
Preparation
    Microwave ground beef in 2-quart casserole for 5 to 6 minutes or until brown.
    Add onion, green pepper and celery.
    Cut eggplant in half.
    Remove pulp and finely chop.
    Add cut eggplant to meat mixture.
    Cover.
