French Bake Tuna - cooking recipe

Ingredients
    1 tomato, peeled and sliced
    1 green pepper, cut into strips (optional)
    1 sliced zucchini
    1 small eggplant, sliced
    1 sliced onion
    1/4 c. minced parsley
    2 Tbsp. lemon juice
    1/2 tsp. thyme
    2 cans water packed tuna, drained
Preparation
    Layer tomato, pepper strips, zucchini, eggplant, onion and tuna in greased casserole.
    Sprinkle with parsley, lemon juice, thyme and salt and pepper, as desired.
    Bake at 375\u00b0 until tender.
