Eggplant Casserole - cooking recipe
Ingredients

1 medium eggplant
1/2 stick oleo
1 egg, well beaten
3/4 c. milk
pepper to taste
cracker crumbs
Preparation
-
Peel and slice eggplant.
Boil in salted water until tender, drain and mash.
Mix in oleo, egg, milk and pepper to taste.
Pour into baking dish, cover with cracker crumbs and dot with butter. Bake at 350\u00b0 until light brown.
