Black Beans - cooking recipe
Ingredients

1/2 lb. bacon
1 clove garlic
1/2 c. chicken stock
2 c. corn kernels
1 medium onion
2 (15 oz.) cans black beans
1 Tbsp. distilled white vinegar
1 c. shredded Monterey Jack cheese
Preparation

Coarsely chop bacon, onion and garlic.
In a 12-inch frying pan, over medium heat, stir bacon, onion and garlic until bacon is crisp, 8 to 10 minutes.
Drain and discard fat.
Drain black beans.
Add beans, chicken stock and vinegar to pan.
Coarsely mash beans with spoon; if made ahead, cover and chill up to one day.
Spoon black beans into an ovenproof dish.
Top beans with corn kernels, then cover with Monterey Jack cheese.
Bake, uncovered, at 400\u00b0 until hot in the center, about 10 minutes.
