Cajun Crawfish Etouffee - cooking recipe

Ingredients
    5 lb. crawfish meat
    1 c. flour
    1 1/2 sticks butter
    1 c. chopped shallots
    1 c. chopped white onions
    1 c. diced celery
    water
    2 Tbsp. minced garlic
    1/2 tsp. cayenne pepper
    1 tsp. black pepper
    1/2 tsp. thyme
    3 bay leaves
    2 Tbsp. chopped parsley
Preparation
    Roux:
    Place butter in saucepan and melt.
    Stir in flour and cook, stirring, to a golden brown.
    Remove from fire and set aside.
