Apple Cake Muffins(Yields 12 Muffins) - cooking recipe

Ingredients
    3 c. flour, sifted
    1/4 tsp. nutmeg
    1/4 tsp. cloves, ground
    1/2 tsp. cinnamon
    1 tsp. salt
    1 tsp. baking soda
    3 eggs
    1 1/4 c. vegetable oil
    2 c. sugar
    1/2 tsp. almond extract
    1 tsp. vanilla
    3 c. apples, chopped
    1 c. pecans, chopped
Preparation
    In a mixing bowl, beat together eggs, vegetable oil and sugar. Add the almond extract and vanilla.
    Fold in the apples and pecans. Sift together the flour, salt, soda and spices.
    Add to the liquid mixture and blend just long enough to moisten the dry ingredients. Don't overmix!
    Divide the batter among the 12 muffin cups.
    Bake at 350\u00b0 for 15 to 20 minutes.
