Cheesy Cauliflower - cooking recipe

Ingredients
    1 large head cauliflower or 5 (10 oz.) pkg. frozen cauliflower, cooked and drained
    3 Tbsp. margarine
    3 Tbsp. all-purpose flour
    1 c. milk
    1 tsp. salt
    1/4 tsp. pepper
    1 1/2 c. (6 oz.) shredded sharp cheese, divided
Preparation
    Melt margarine in heavy saucepan over low heat; add flour, stirring until smooth.
    Cook 1 minute, stirring constantly. Gradually add milk and cook over medium heat, stirring constantly, until thickened and bubbly.
    Stir in salt and pepper.
    Remove from heat; stir in 1 cup cheese and set aside.
