Baked Squash Surprise - cooking recipe

Ingredients
    1 1/2 lb. fresh yellow squash or 2 (16 oz.) cans squash
    salt and pepper to taste
    1 (2 oz.) jar chopped pimiento
    1 medium onion, chopped fine*
    1 c. Flav-O-Rich sour cream
    1 can cream of chicken soup
    4 small carrots, grated
    1 pkg. cornbread or herb stuffing or 4 c. cornbread
    3/4 c. Flav-O-Rich butter, melted
Preparation
    Cook squash until tender; drain, mash and season.
    Stir in remaining ingredients, except stuffing and Flav-O-Rich butter. Mix Flav-O-Rich butter and stuffing; divide.
    Line casserole with stuffing (little more than half of it).
    Add squash mixture.
    Top with remaining stuffing.
    Bake for 30 minutes at 350\u00b0.
    Serves 8 to 10.
