Carrot Bread - cooking recipe

Ingredients
    3 eggs, well beaten
    3 c. sugar
    1 c. oil
    1 tsp. salt
    2 c. finely grated carrots
    1 c. chopped walnuts
    1 c. whole wheat flour
    2 c. unbleached flour
    1 tsp. soda
    1 tsp. cinnamon
    1 can crushed pineapple, well drained
    2 tsp. vanilla
Preparation
    Combine eggs, sugar, vanilla and oil.
    Stir well.
    Add sifted dry ingredients.
    Stir well.
    Add carrots, nuts and pineapple. Stir well.
    Spoon into greased loaf pans.
    Bake at 375\u00b0 for 1 hour.
    Serve cold, with or without butter.
