Mango Salad - cooking recipe
Ingredients

3 (3 oz.) pkg. lemon Jell-O
1 (29 oz.) can mango, drained (save liquid)
3 c. boiling liquid (mango liquid plus enough water to make 3 c.)
1 (8 oz.) pkg. cream cheese
juice of 1 lime (optional)
rind of 1 lime, grated (optional)
Preparation

Dissolve Jell-O in boiling liquid. Combine mangos and cream cheese in blender and blend until creamy. Add to Jell-O and stir in lime juice and rind.
Pour into a greased mold and chill overnight.\tUnmold and serve on bed of shredded lettuce. Garnish with kiwi and/or strawberries. Makes a very pretty dish for luncheon.
