Ingredients

1 c. granulated sugar
2 to 3 drops cold water
3/4 c. sugar
7 eggs, separated
3 pieces lemon rind
3 c. warm milk
Preparation

In a heavy cast-iron pan, heat 1 cup sugar with cold water, stirring constantly so that the sugar melts and caramelizes, but does not burn.
Pour melted sugar directly into the baking dish, quickly coating all inside surfaces of the dish.
Sugar will harden to candy consistency.
Set aside.
