Southern Cornmeal Muffins - cooking recipe

Ingredients
    1 c. yellow cornmeal
    1 c. all-purpose flour
    2 tsp. baking powder
    1 tsp. soda
    1/2 tsp. salt
    1 tsp. sugar
    2 egg whites or 1/4 c. egg substitute
    1 1/4 c. plain nonfat yogurt
    1/4 c. vegetable oil
Preparation
    Combine cornmeal, flour, baking powder, soda, salt and sugar in a large bowl.
    Make a well in the center of the mixture. Combine egg whites, yogurt and oil; add to dry ingredients, stirring just until moistened.
    Spoon mixture into muffin pans coated with spray.
    Bake at 425\u00b0 for 12 to 14 minutes, or until golden brown.
    Remove from pans immediately.
    Makes 1 dozen; 1 muffin counts 1 bread, 1 fat and 25 optional calories.
