Carrot Souffle - cooking recipe

Ingredients
    1 lb. carrots, sliced
    salt
    1/2 c. butter, melted
    1 c. sugar
    3 Tbsp. flour
    1 tsp. baking powder
    1 tsp. vanilla
    3 eggs
Preparation
    Cook the carrots until tender in salted water; drain.
    Add the butter and mash the mixture (easier to mash in a blender or food processor).
    Mix together the sugar, flour, baking powder, vanilla and eggs.
    Add to the carrots and blend well.
    Pour into greased 1-quart casserole and bake at 350\u00b0 for 45 minutes.
    Serves 4 to 6.
