Madeira Rice With Peas And Almonds - cooking recipe

Ingredients
    1 tsp. plus 2 Tbsp. butter
    1/3 c. sliced almonds
    3/4 c. chopped onion
    1/2 c. Madeira wine
    1 c. uncooked converted-style rice
    1 (10 3/4 oz.) can condensed chicken broth
    2/3 c. plus 1/2 c. water
    1/2 tsp. salt
    1/8 tsp. pepper
    10 oz. pkg. frozen peas
Preparation
    In large saucepan, melt 1 teaspoon butter over medium heat. Add almonds and stir 2 to 3 minutes, until lightly browned. Remove from pan and reserve.
    Add 2 tablespoons butter and saute onions until tender, 5 minutes.
    Add Madeira wine; bring to a boil.
    Reduce heat and simmer 5 minutes.
    Add rice, broth, water, salt and pepper.
    Bring to a boil.
    Reduce heat; cover and cook 15 minutes.
    Stir in peas; cover and cook 5 minutes or until rice is tender and liquid has been absorbed.
    Sprinkle with toasted almonds.
