4 eggs
6 Tbsp. flour
1 tsp. salt
1 Tbsp. granulated sugar
2/3 c. milk
1 Tbsp. butter
1 apple, grated
1 Tbsp. lemon juice
2 Tbsp. confectioners sugar
jam or preserves
Preparation

Preheat oven to 425\u00b0.
Beat eggs; add flour, salt and sugar, sifted together.
Beat 5 minutes or more.
Add milk; beat 5 minutes longer.
Melt butter in skillet.
Pour in butter. Sprinkle batter evenly with grated apples.
Bake in 425\u00b0 oven for 8 minutes; reduce heat to 350\u00b0 and bake 15 to 18 minutes longer, until pancake is puffed and golden.
Sprinkle with lemon juice and confectioners sugar.
Cut in wedges and serve with jam or preserves.

6 to 8 servings.
