Breakfast Casserole - cooking recipe
Ingredients

1 lb. sausage
3 to 4 baked potatoes (bake night before then refrigerate)
2 cans chopped green chile
cheese (your choice Cheddar, Monterey, Jack)
salt and pepper to taste
1 doz. eggs
1 c. sour cream
Preparation

Brown sausage in pan big enough to hold sausage and potatoes. When brown, add in the peeled and diced potatoes. Cook through until hot. Layer in bottom of greased 13 x 9 pan. Layer green chiles and cheese. Sprinkle salt and pepper to taste. Spread grated cheese over the top. Mix the eggs and sour cream with mixer and pour mixture. Bake at 350\u00b0 until center is firm. Takes about 35 to 45 minutes. Serve with salsa.
