Beet Salad(Insalata Barbabietola) - cooking recipe

Ingredients
    6 medium beets
    1 medium onion, sliced
    1/2 tsp. whole cloves
    3 hard-boiled eggs, peeled (optional)
    1/4 c. olive oil
    1/3 c. vinegar
    1 tsp. salt
    1/4 tsp. black pepper
Preparation
    Cut off all but 2 inches of beet tops.
    Cut root end to 1-inch on bottom of beets.
    Place
    beets
    on baking pan, lined with foil and bake for 1
    hour
    at
    350\u00b0.
    Check
    to make sure they are tender; if not, return
    to
    oven for a little longer. When beets are cooked,
    cool
    and
    peel.
    Slice
    into 1/4-inch thick slices or wedges and
    place
    in
    glass bowl with onions. Add eggs to beets, if
    desired.
    Mix
    rest
    of ingredients and pour over beets.
    Let marinate at least 5 hours.
    Makes 3 to 4 servings. These will last up to 2 weeks in refrigerator.
