Fried Eggplant - cooking recipe
Ingredients

1 eggplant
1 small onion, finely chopped
2 eggs
cornmeal
flour
Preparation

Select a nice, firm eggplant, free of blemishes.
Peel and slice.
(Slice anyway you please, round, shoestring or wedges, etc.).
Soak at least 15 to 20 minutes (longer if preferred) in very salty water.
Drain and pat dry.
Mix onion, eggs and enough cornmeal and flour to make a batter.
Dip eggplant in batter and fry in hot grease, being careful not to burn grease.
(Always use fresh shortening or oil.)
Serve at once.
Serves a large family.
