Skillet Hominy - cooking recipe
Ingredients

4 slices bacon
1 medium onion, chopped
1 green pepper, chopped
1 (14 1/2 oz.) can hominy
4 large eggs (may use egg substitute)
pepper to taste
1/2 to 1 c. shredded Cheddar cheese
Preparation

Fry bacon until crisp.
Drain on toweling and crumble.
Pour off all drippings except 1 tablespoon.
Add onion, green pepper and hominy.
Cook gently.
Stir often until onion is yellow.
Beat eggs and add pepper.
Pour over hominy mixture.
Sprinkle with bacon. Cover and cook gently until eggs are set.
Sprinkle with cheese. Cover and let stand off heat until eggs are done and cheese melts.
