Cream Of Broccoli Soup - cooking recipe

Ingredients
    1 bunch broccoli
    1/4 c. or 1/2 stick butter
    2 Tbsp. chopped onions
    3 ribs celery, minced
    1/4 c. flour (all-purpose)
    4 c. poultry broth
    2 c. cream or milk
    1/2 tsp. salt
    1/2 tsp. black pepper
    water, reserved from cooking broccoli
Preparation
    Trim and peel stems of broccoli and cut a small cross in stem bottom.
    Steam until dark green and tender, but not limp.
    Trim and chop flower tops of broccoli.
    Puree other half of broccoli. Melt butter and gently cook onions and celery until limp.
    Stir in flour and poultry broth.
    Slowly stir in cream or milk that is at room temperature.
    Add salt and black pepper.
    Makes about 8 cups.
