Zucchini Provencale - cooking recipe

Ingredients
    3 medium tomatoes, sliced
    2 medium zucchini, sliced
    1/4 c. olive oil
    1/4 c. chopped parsley
    2 tsp. chopped shallots
    1/2 clove garlic
    1/4 tsp. basil
    1/4 tsp. thyme
    1/4 tsp. salt
    1/8 tsp. pepper
Preparation
    Preheat oven to 375\u00b0.
    Arrange tomatoes and zucchini in rows in a 13 x 9-inch baking dish.
    In a small bowl, combine oil, parsley, shallots, garlic, basil, thyme, salt and pepper.
    Pour over vegetables.
    Bake for 30 minutes, basting occasionally with the liquid in the pan.
