Fresh Vegetable Soup - cooking recipe

Ingredients
    4 c. water
    2 potatoes, diced
    2 carrots, sliced
    1 zucchini, halved lengthwise, then diced
    1 chopped onion
    1 c. chopped celery leaves
    2 ribs celery, sliced
    1/2 tsp. thyme or any herb blend
    1 tsp. salt
    2 c. thin strips fresh spinach
    ground pepper
Preparation
    In a large saucepan, bring to a boil all ingredients except spinach and pepper.
    Reduce heat. Simmer 15 to 20 minutes or until potatoes and carrots are tender. Add spinach. Cook 2 minutes. Season with pepper. A small amount of olive oil can be added at the beginning along with a chopped tomato, if desired. Serves 8.
