Potato Pancakes - cooking recipe

Ingredients
    3 c. cold mashed potatoes
    3/4 c. shredded Cheddar cheese
    1 medium chopped onion
    1 egg
    1 tsp. salt
    1/4 tsp. pepper
    1 tsp. parsley
    2 to 4 Tbsp. flour
Preparation
    Saute chopped onion in 1 tablespoon butter for 6 minutes.
    Mix potatoes, onion, cheese, egg, salt, pepper and parsley with mixer on low speed until smooth; make patties (about 1/3 cup each).
    Dip patties in flour and saute in butter over medium heat (about 4 minutes on each side or until golden brown).
    Delicious with sour cream or buttermilk dressing on it.
