Herbed Pot Roast - cooking recipe

Ingredients
    2 lb. beef roast (3 to 4-inches thick)
    2 Tbsp. shortening
    1 (1 lb.) can tomatoes
    1/4 c. dry red or white wine
    3/4 c. chopped onions
    1/4 c. finely chopped carrot
    1/4 c. finely chopped celery
    1/2 tsp. minced garlic
    1 tsp. salt
    1/2 tsp. oregano
    1/2 tsp. basil
    1/4 tsp. pepper
Preparation
    Brown meat well in shortening.
    Add remaining ingredients. Cover and bake in 325\u00b0 oven for 1 1/2 to 2 hours, until meat is fork-tender.
    Make gravy with drippings.
    Serves 4.
