Tropical Carrot Raisins Salad - cooking recipe
Ingredients

2 c. coarsely shredded carrots
1/4 c. plus 2 Tbsp. raisins
1 (8 oz.) can crushed pineapple (in juice), drained
1/4 c. vanilla low-fat yogurt
2 Tbsp. nonfat mayonnaise
1 1/2 tsp. creamy peanut butter
1/8 tsp. ground cinnamon
Preparation

Combine carrots, raisins and pineapple in a medium bowl.
Toss well.
Combine yogurt and remaining ingredients in a small bowl; stir well.
Add to carrot mixture, stirring well.
Cover and chill thoroughly.
Yields 6 servings (85 calories per 1/2-cup serving).
