Spaghetti With Marinated Tomatoes - cooking recipe

Ingredients
    1 lb. (2 large or 4 medium) ripe tomatoes, cut into 1/2-inch dice
    1/4 c. slivered fresh basil leaves
    4 scallions, thinly sliced
    2 Tbsp. olive oil
    1/2 tsp. grated lemon zest
    1 Tbsp. lemon juice
    1/2 tsp. salt
    1/2 tsp. pepper
    1/2 c. yellow peppers, diced
    1/2 tsp. garlic powder (optional)
    spaghetti
    grated Parmesan cheese
Preparation
    Combine ingredients in large bowl. Marinate at room temperature 30 minutes.
    Cook pasta.
    Add tomatoes.
    Toss and serve with grated Parmesan cheese.
    Serves 2 as a main dish or 4 as a side dish.
