Chicken Pineapple Stir-Fry - cooking recipe

Ingredients
    1 chicken breast, skinned, boned and cut into chunks
    20 oz. can pineapple chunks (in juice not syrup)
    2 cloves garlic, pressed
    1 green bell pepper, slivered
    1 tsp. ground ginger
    1/3 c. soy sauce
    2 Tbsp. olive oil
    1 Tbsp. cornstarch
    2 medium carrots, sliced
    rice
Preparation
    Drain pineapple, reserving 1/3 cup juice.
    In large skillet, stir-fry chicken with garlic and ginger in oil for 2 minutes.
    Add pineapple, carrots and bell pepper.
    Cover; steam 2 to 3 minutes until vegetables are tender-crisp.
    Combine pineapple juice, soy sauce and cornstarch.
    Pour into skillet; add green onions and toss until heated through.
    Serve over rice.
