3/4 c. Atkins bake mix
1 Tbsp. cocoa powder
1 1/2 tsp. baking powder
12 packets sugar substitute
1/3 c. unsweetened peanut butter
1/2 c. heavy cream
2 eggs, beaten
1 tsp. vanilla extract
Preparation

Heat oven to 375\u00b0.
Whisk dry ingredients in a bowl. Mix peanut butter, cream, egg and vanilla extract until smooth. Add to bake mix mixture; stir until blended.
Drop dough by tablespoonfuls onto greased baking sheets. Smooth dough with fingertips and press cookies with the back of a fork to flatten. Bake 8 to 10 minutes, until browned. Cool on sheets 1 minute before transferring to wire racks to cool completely.
