Sweet And Sour Meatball Salad - cooking recipe

Sesame Oven Meatballs (recipe follows)
1 small green pepper, seeded and cut into 1/2-inch wide strips
2 medium-size carrots, cut diagonally into 1/8-inch thick slices
2 medium-size stalks celery, cut diagonally into 1/4-inch thick slices
1 (8 oz.) can water chestnuts, drained and thinly sliced
1 (8 oz.) can pineapple chunks in their own juice, drained
2 Tbsp. cornstarch
1/2 c. firmly packed brown sugar
1/2 tsp. minced fresh ginger or 1/4 tsp. ground ginger
1/4 tsp. crushed red pepper (optional)
2 Tbsp. soy sauce
1/2 c. each: cider vinegar and regular-strength beef broth
1 to 1 1/2 qt. shredded, lightly packed iceberg lettuce
1 (5 oz.) can chow mein noodles
Preparation

Prepare Sesame Oven Meatballs as directed.
In a large bowl, combine meatballs, green pepper, carrots, celery, water chestnuts and pineapple; set aside.
In a small pan, combine cornstarch, brown sugar, ginger, red pepper (if desired), soy, vinegar and broth; mix until smooth.
Place over high heat and cook, stirring, until sauce boils and thickens.
Pour over meatball mixture and stir gently to coat evenly.
Divide lettuce evenly among 4 to 6 dinner plates.
Top lettuce with noodles; then spoon meatball mixture evenly over each serving.
Makes 4 to 6 servings.
