Pumpkin Pancakes - cooking recipe
Ingredients

2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. ginger
1/4 tsp. nutmeg
2 eggs, lightly beaten
1 1/2 c. buttermilk
1 c. cooked, mashed pumpkin
1/4 c. water
1/4 c. vegetable oil
Preparation

Sift together the first 7 ingredients.
Beat the next 5 ingredients together, then blend into dry ingredients.
For each pancake, pour about 1/4 cup batter onto a hot, lightly greased griddle. Turn pancakes when tops are covered with bubbles and edges look dark.
Serve immediately.
Yields 20 (4-inch) pancakes.
