    1 stick plus 3 Tbsp. butter (room temperature
    12 oz. bittersweet chocolate, broken in pieces (preferably Lindt or Tobler)
    3/4 c. sugar
    5 eggs, separated
    1/3 c. unbleached all-purpose flour
    confectioners sugar (for garnish)
Preparation
