Morning Glory Muffins - cooking recipe

Ingredients
    2 c. flour
    1 1/4 c. sugar
    2 tsp. soda
    2 tsp. cinnamon
    1/2 tsp. salt
    2 c. grated carrots
    1/2 c. raisins
    1/2 c. nuts
    1/2 c. coconut
    1 apple, peeled, cored and grated
    3 eggs
    2 tsp. vanilla
    3/4 c. salad oil
Preparation
    Mix the first 5 ingredients in a large bowl.
    (You can use food processor to grate carrots and apple.)
    Stir in next 5 ingredients.
    In a separate bowl, beat the eggs, vanilla and oil. Stir into flour mixture just until combined.
    Spoon into well-greased muffin cups, filling almost to top.
    Bake at 350\u00b0 for 20 minutes.
