Potato Bread - cooking recipe
Ingredients

1 medium potato, peeled and cubed
1 1/2 c. water
2 pkg. active dry yeast
6 to 6 1/2 c. all-purpose flour or may use cornmeal
3 Tbsp. sugar
2 Tbsp. shortening
1 Tbsp. salt
Preparation

Heat oven to 375\u00b0.
In a medium saucepan, cook potato in the water about 12 minutes or until tender; do not drain.
Cool cubed potato mixture to 110\u00b0 to 115\u00b0.
Set aside 1/2 cup of the cooking liquid.
Mash potato in the remaining liquid.
Add enough warm water to make 2 cups mashed potato mixture.
