Low-Fat Rigatoni Caesar Salad(Yields 4 Servings) - cooking recipe

Ingredients
    2 large ripe tomatoes, cut wedged
    6 finely chopped anchovy fillet
    3 Tbsp. fresh lemon juice
    2 Tbsp. olive oil
    1 tsp. minced garlic
    1/2 tsp. salt
    1/2 tsp. freshly ground pepper
    1 lb. rigatoni or ziti
    1/4 c. freshly grated Parmesan cheese
    4 c. torn romaine lettuce (fresh), shredded
    Parmesan cheese
Preparation
    Combine the tomatoes, anchovies, lemon juice, olive oil, garlic, salt and pepper in a large serving bowl.
    Let stand for 20 minutes.
    Meanwhile, cook the pasta according to package directions; drain.
    Toss the dressing with hot pasta and Parmesan cheese.
    Let stand for 10 minutes.
    Stir in the romaine lettuce and serve immediately.
    Garnish with shredded Parmesan cheese. Enjoy!
