Hearty Lentil Stew - cooking recipe

Ingredients
    2 medium carrots, diced
    1 small head escarole, coarsely chopped
    1 onion, chopped
    2 ribs celery, sliced
    2 Tbsp. olive oil or vegetable oil
    4 c. chicken broth
    4 c. tomato juice
    1 (16 oz.) pkg. dried lentils, rinsed and drained
    1 lb. turkey kielbasa, sliced 1/2-inch thick
    1/2 tsp. dried thyme
    salt and pepper to taste
Preparation
    In 6-quart Dutch oven, saute carrots, escarole, onion and celery in oil for 3 to 4 minutes.
    Add chicken broth, tomato juice, lentils, kielbasa and thyme.
    Bring to a boil. Cover and reduce heat.
    Simmer 25 minutes, stirring occasionally.
    Season to taste.
