Ingredients

1/2 bu. beets
8 c. water
8 c. vinegar
8 c. sugar
1/2 c. pickling spices
Preparation

Cook beets until fork-tender. Slip skins off and slice to desired size. Add beets and remaining ingredients to liquid and bring almost to a boil. Turn heat down but keep everything very hot, including jars, caps and lids. Put beets in hot jars and they will seal.
