Vegetarian Lentil Soup(Serves 6 To 8) - cooking recipe
Ingredients

3 c. washed lentils
3 qt. cold water
2 medium onions, diced
2 large carrots, diced
1 c. or more celery, diced
2 small potatoes, grated
4 to 5 bay leaves
1/2 tsp. thyme
few shakes cayenne (careful!)
1/2 tsp. pepper (optional)
2 tsp. lemon juice or vinegar
salt to taste
Preparation

Put washed lentils in large pot; add water, prepared vegetables and seasonings.
Bring to a gentle boil over medium heat; reduce heat and allow to simmer until well done, about 1 hour.
Remove bay leaves and serve.
